Love Sausage RV oven recipe with bacon

This is a recipe that incorporate kielbasa and bacon and is compatible even with the 17” RV oven that I made after watching a video.

I watched a video a couple days ago on the Emmymade Youtube channel. She made this meal and I decided to copy her.

It’s really quite easy.

Start with a kielbasa, any flavor that you like, in the horse yoke shape.

Cut the top curve and flip it over to create the top of a heart. If you want to do more carving and toothpick-construction then by all means be as exact as you like. I am too lazy for that.

Wrap slices of bacon around the kielbasa - pin the ends in place with toothpicks.

Bake the meat in a hot oven - in a cast iron skillet is perfect but any baking dish that will contain the bacon fat will do. Bake until the bacon is partially cooked and drippings are accumulating.

Crack a couple eggs into the center. Full disclosure: I added a bit more bacon fat with the eggs. Add salt and pepper, or whatever seasoning you like on your eggs. Remember, the meat will be salty so don’t overdo the salt.

Bake for a few more minutes - maybe 7 or 8? I don’t know, I just watched it until the eggs were cooked. On the other hand, I slightly overcooked the eggs.

Serve with toast. If you timed it right, the yolk will break all over the toast. Which is the best way to eat an egg and toast, if you ask me.

Even that little 17-inch oven can hold a cast-iron skillet. So go for it! Or, use the campfire for a rustic, outdoor cooking experience to love.
