Protein Waffle Recipe for StressLess Sandwiches

These waffles make a great alternative to bread when I’m really craving a sandwich! They are easy to make-ahead and freeze for a quick any-time breakfast or lunch.

Easy to make

It is so easy to make up several batches of these waffles in one day. It’s a bit time-consuming depending on how fast your waffle iron is. I use a mini iron, so I make the waffles one at a time.

Easy to store

Once the waffles are cool, though, I can put them in an airtight container in the freezer and I have waffles any time I want. They freeze beautifully, and thaw quickly.

Easy to reheat

If I want a warm waffle or two, perhaps for breakfast, then I pop them in the microwave or air fryer and heat them up quickly. Added to a side of bacon, sausage, or SPAM and drizzled in honey or maple syrup, they make a delicious breakfast offering.

Easy sandwiches

I try to avoid bread but I really like sandwiches. I often thaw two waffles and use them as bread for a sandwich. We’ve made delicious breakfast sandwiches on many camping trips, and even at home. For lunches, I really like these waffles to hold a generous serving of chicken salad. Tony likes them for peanut butter and jelly sandwiches. Yes, they can be a bit sweet, depending on the protein you use, but that’s not a problem if you have the right sandwich ingredients!

Protein Waffle Recipe

The ingredients:

1 scoop Protein Powder, any flavor

2 Eggs

1 scoop Psyllium Husk or other fiber

1 tsp Vanilla Extract (or other flavor to taste)

1-2 Tbsp Water, to pourable batter texture

Whisk

  • Beat eggs

  • Add in dry ingredients and extract and whisk smooth

  • Add enough water to make the batter easy to pour

Waffle

  • Brush butter on the top and bottom plate of the waffle iron

  • Pour enough batter to cover the bottom plate of the waffle iron

  • Close waffle iron and allow waffle to cook completely. I usually allow it to cook for one and a half or two cycles of the waffle iron

  • Be careful removing - the iron is hot!

  • Cool cooked waffles on a plate. If you plan to eat them right away, add some butter while they are hot.

Wash up

  • Clean up your waffle iron and batter bowl, because that’s all there is to it!
