Bacon-wrapped Dates
This easy, sweet, and savory dish makes a good appetizer or side dish.
Bake these treats in the RV oven, or a cast-iron dutch oven over a fire. No matter how you cook them, people will gobble them up!
Ingredients
10 slices Bacon, thin-sliced
20 Medjool dates
Your choice in any combination (if desired):
4 ounces Bleu, goat, or feta cheese
4 ounces Nuts: try almonds, walnuts, or pistachios
4 ounces Chocolate chips
4 ounces Fruit: try pomegranate, cranberries, etc.
To taste Fresh-ground pepper
To taste Sea salt flakes
To taste Warmed honey, drizzle after baking
Bacon Wrap
This is optional: pre-bake the bacon until slightly cooked. This will help the final bacon be a bit more crispy.
Cut each bacon slice in half
Stuffed
Choose your preferred items for stuffing. Or, don’t stuff them at all. Just bacon and date is lovely!
Chop or crumble any large items so they fit nicely in the pit space.
Dates
Cut each date in half lengthwise, unless both apply:
They are pre-pitted (I don’t like to trust anyone else to do this)
You are not stuffing them
Add whatever stuffing you decide to use, then press them back together
Wrap a half-slice of bacon around each date and secure with a toothpick
Baked
Bake at 400 degrees for 5-7 minutes, flipping each date about halfway through
