Campground cowboy caviar recipe
This campground cowboy caviar recipe is easy to make and takes no space in your RV refrigerator. You can dry store all the ingredients and it’s a really delicious as either a side dish or even main dish.
Ingredients:
15oz can of black beans, rinsed and drained
15.5oz can black-eyed peas, rinsed and drained
Fire roasted corn, frozen
14.5 oz can Fire roasted tomatoes, drained
Avocado, diced
1/2 cup chopped onion
1/2 cup chopped cilantro
Instructions
Combine the beans, black-eyed peas, corn, tomaties, onion, cilantro, dressing and lime juice into a bowl. We like these RV-friendly collapsible bowls as they take very little space when collapsed but can be used for almost anything.
Cover the bowl and place in your RV fridge or ice chest for about an hour.
Open the bowl and add in your diced avocado.
Hint - you can also make this ahead - just add the avocado right before you serve it
These are extra good when served with chile lime tortilla chips if you can find them.
