German apple pancake campground recipe

The German Apple pancake, or Dutch Baby, was one of the more popular breakfast items when we owned our bed & breakfast. This adaptation of the German Apple pancake recipe is something we’ve made over our propane campfire with our cast iron pan hung over the fire by a tripod.

You can substitute a number of things for the apples in here as your travels take you to different places. For example, this is also great with pears that grow in our own area. Yum.

Of course you’ll want to serve this with a side of sausage or bacon.

Ingredients

The dough

Four eggs

1 tsp vanilla

1 cup of milk

1/2t baking powder

1 pinch of salt

1 Tablespoon of sugar

1/2 cup of sifted flour

1/2 tsp of ground nutmeg

2 tablespoons melted, unsalted butter

The Apples

1/4 cup unsalted butter

1/4 cup brown sugar

1/2 tsp cinnamon

1/2 tsp ground nutmeg

1 large, tart apple

Preparation

The batter

  1. Beat eggs together

  2. Add vanilla and milk

  3. Sift in the flour, salt, sugar, and baking powder

  4. Add nutmeg and melted butter

The apples

  1. Melt the butter, brown sugar, and spices in your cast iron skillet

  2. Add apples and cook until lightly bubbling

  3. Pour the batter over the apples

Cooking over the campfire

Cover the skillet and hang it close to the fire for 20-30 minutes
*The pancake, when cooked, will puff up impressively! It deflates pretty quickly.
