Pineapple Upside Down Martini recipe
At a tiki bar we used to visit regularly, one of the bartenders concocted a pineapple upside down martini. It was one of my two favorites, along with the chocoholic martini. Since pineapple upside down was my Grandpa’s favorite cake, drinking them was kind of my way of sharing with him.
I never was able to recreate the chocoholic martini, but I did work until I found a recipe for a pineapple upside down martini that I liked.
I belong to a group of fabulous women called the Tow Girlz. Each spring, one of the Girlz organizes a campout that includes an afternoon trailer tour. Each of the Girlz prepares a treat in the form of a cocktail or a nibble, and we tour around the campground dressed in lovely (or silly) hats and share our treats and trailers.
My share is the pineapple upside down martini. I hope you enjoy it!
Rim chilled glass with pineapple juice, or rub a pineapple chunk, then dip in brown sugar.
Shake with ice:
2 ounce coconut vodka
1 ounce pineapple vodka
2 ounces pineapple juice
Pour into prepared glass
Garnish with a maraschino cherry
