Easy No-Bake Eclair Cake

For camping in the summer, here is a great dessert recipe that is easy and delicious.
No cauliflower in this recipe!
I’ve been experimenting with a lot of low-carb and cauliflower recipes, but I wanted to give us, and you, a break from the cauliflower recipes. There are no diet restrictions in this recipe!
Memories and taste buds
Eclairs are a special kind of treat to me - they are kind of a donut, but even better with their creamy filling and chocolate icing.
Backstage at the theatre company, one of the cast members would bring a box of mini eclairs nearly every weekend. He said he wasn’t allowed to eat them at home, so he indulged when he was in a production.
This easy, no-bake dessert is a delicious version of the classic eclair, and can be made while camping with little preparation time and cleanup.
Sweet Camping Memories
One great thing about this recipe is how easy it is to prepare. The pudding can be prepared ahead of time, even at home. There aren’t too many ingredients. The cool, creamy filling really hits the spot after a great dinner, or in the afternoon with a cup of coffee. This is an easy and delicious dessert recipe for summer camping.

No-Bake Eclair Cake Recipe
3 1/2 cups Milk
2 (3.4 oz) boxes Instant Vanilla Pudding
16 oz Cool Whip
1 box Graham Crackers
1 tub Chocolate Frosting
The Filling
In a large mixing bowl whisk milk and both boxes of vanilla pudding until well combined, set aside to thicken.
Fold in cool whip.
The Layers
Place a single layer of crackers in a 9X13 pan
Top with half of the pudding mixture
Repeat by adding another layer of crackers the remaining pudding mixture
Top with a final layer of crackers
The Chocolate
Scoop chocolate frosting into a microwave-safe bowl and heat in 15 second increments until melted
Pour the frosting over top crackers and spread
Refrigerate about 30 minutes until frosting is set then cover and chill overnight
