Carb-friendly substitute for tater tots - veggie tots
We have a carb-friendly substitute for tater tots that’s easy and delicious. This Veggie Tots recipe that takes a favorite childhood dish - tater tots - to new heights. This recipe is carb-friendly and might even be more delicious than traditional tater tots. Say hello to a reinvented version of tater tots that will leave you craving more.
We still like to indulge in childhood favorites like hot dogs, tater tots, and the like, we do try to eat better nowadays. So we tired this twist of using shredded veggies in place of potatoes for a lower-carb treat to make dinner time more fun.

We found that using an air fryer is the best way to make these as it tends to help make the veggie tots firmer, but you could also use the oven in your RV.
By substituting riced cauliflower and broccoli for potatoes these are also much more carb-friendly and the pork rind coating actually adds a nice crunch as well as a very good flavor. We’re pretty sure that these will be a hit with the kiddos. Further, by making them yourself you avoid the long list of strange ingredients that are on the list of most tater tots so we’re going to say they’re healthier.

Veggie Tots Recipe
1 cup Riced Cauliflower
1 cup Riced Broccoli
1/2 cup shredded sharp cheddar cheese (you could easily substitute parmesan as well)
1 Egg
To taste Salt & Pepper, Garlic & Onion or any seasonings
2 cups Pork Rinds, crushed
Dry the veggies
Rice (shred) the veggies and mix together. No need to pre-cook
Squeeze veggies between paper towels or cheesecloth to remove excess water
Mix the ingredients
Note: good cheese is a vital ingredient! Sharp white cheddar is so perfect for this combo but you could also use parmesan
Mix together veggies, cheese, egg, and seasonings of your choice
Form the mixture into tots - we used a small measuring scoop about one tablespoon in size so they are all the same size for even cooking
Coat tots with pork rinds
Pour some crushed pork rinds into a shallow bowl and roll each tot until coated. We used to crush our own pork rinds but have since found crushed pork rinds at our local grocery store. We have also found crushed pork rinds on Amazon.
Cook
Preheat the air fryer to 390°F
Air-fry the tots in the air fry basket for about 20 minutes, or until the crumbs begin to get brown and crispy
Dip!
You might want to eat these by themselves. Or maybe make a fry sauce: one part ketchup; two parts mayonnaise; and a touch of pickle juice, garlic, paprika, salt, and pepper (to taste, of course!)
