Steak and Veggies Recipe
At our inaugural StressLess Camping Quartzsite Meetup we enjoyed several potluck meals. We certainly ate well and got to share recipes with friends old and new.
Daniel and Jennifer brought their beef and veggies to a potluck, and it was a very popular dish!
This would be a perfect potluck offering. For easier preparation, it’s a good idea to pre-cut and season your ingredients. This recipe can be cooked in so many different ways, such as in a cast-iron skillet over the stove or campfire, and even perfect for a flat-top griddle. If you are a fan of “foil packet” meals, this is also a good ingredient list for that type of meal.
Steak and Veggies Recipe
Ingredients:
1 1/2 lbs Top Sirloin Steak
3 Golden Potatoes
2 Fresh Carrots
1 Fresh Zucchini
1/2 Sweet Onion
Salt and Pepper and other seasonings to taste
Instructions
Cube the sirloin into 1 inch cubes (prep ahead for easier mealtime).
Season sirloin as desired.
Cook the sirloin in a cast-iron skillet over the campfire or on the RV stove*.
Slice the potatoes and cut up the veggies (prep at home for an easy camp meal).
Set the steak aside and cook up the potatoes and veggies.
Mix all together and enjoy!

You can tweak this with different veggies or whatever you like.
