Crowd-Pleasing Biscuits and Gravy Breakfast
At our inaugural StressLess Camping Quartzsite Meetup we enjoyed several potluck meals, even at breakfast time! We ate very well. We are happy that our friends agreed to share their favorite recipes with us, and now we share one with you.
Big thanks to Cindy who not only made this breakfast for a potluck, but surprised Tony and Peggy one morning with a breakfast fit for royalty! We love camping with Cindy and Paul, and nobody goes hungry.
We’ve mentioned several times how much we love breakfast. We once owned a bed & breakfast, and loved experimenting with hearty and delicious breakfast recipes which we still enjoy today.
A favorite breakfast any day is biscuits and gravy. Who can resist warm, flaky biscuits and a meaty, spicy sausage gravy? Do you like your sausage gravy thick or thin? How about spicy? There are so many recipes for pork sausage gravy. I’ve included a really simple recipe here. You can choose the spiciness by the sausage you buy!
This is a perfect offering for a breakfast potluck. Since there is sausage in the biscuits, it might even be acceptable to make a meatless gravy. But where is the fun in that?
If you don’t have, or don’t like, your RV oven, you can bake the biscuits in a cast iron dutch oven over the campfire. Or you could even bake them at home before a campout! This recipe is designed to make individual muffin-size biscuits, but the whole recipe can be baked together in a 9x13 baking dish, or in a dutch oven. Cindy doesn’t use her RV oven, but she can bake up a sorm in her Omnia Oven.
Biscuits and Gravy Breakfast Recipe
The Biscuits:
1 can Grands biscuits (8 per can)
1 pound Breakfast Sausage
24 Eggs
3/4 cup Milk
2 cups Shredded Cheese of Choice
Salt and Pepper and other seasonings to taste
The Gravy*:
1 tube Breakfast Sausage
1/4 cup Flour
2 1/2 cups Milk
Salt and Pepper to taste
The Biscuits:
Cut each biscuit into four pieces and place two pieces into 16 greased muffin cups
Add 2 TBSP sausage to each cup
Whisk eggs with milk and seasonings
Pour egg into each cup to cover biscuits and top each cup with 2 TBSP cheese
Bake at 350 for approximately 30 minutes or until biscuits are cooked through
The Gravy*:
Cook the sausage in a cast iron or other skillet
Gradually add flour to the pan, stirring constantly so the flour doesn’t form lumps
Slowly stir in the milk and keep stirring until everything is mixed
Add salt and pepper and allow to simmer until thickened
**This recipe makes 16 biscuit muffins, or can be made in a 9X13 baking dish, or in a cast iron dutch oven over the campfire**
StressLess Tips:
If you don’t have, or don’t like your RV oven, bake biscuits in cast iron over the campfire!
*Gravy is a perfect dish for a cast-iron skillet.
