Refreshing Make-Ahead Broccoli Salad Recipe

When summer turns up the heat, it’s nice to have some chilled, refreshing recipes at your fingertips. For me, broccoli salad is an easy summer side dish. I love to prepare it for potlucks.

Broccoli salad is a delightful combination of crisp vegetables, tangy dressing, and savory toppings that make it a standout dish in any gathering or meal. Packed with nutrients and vibrant flavors, this salad offers a refreshing twist on traditional greens. Whether you're preparing it for a summer barbecue, a potluck, or simply as a side dish for dinner, its crunchy texture and zesty dressing are sure to please. I’m sharing how i create this wholesome and appetizing broccoli salad to elevate your dining experience.

This is such an easy dish to prepare in an RV. It requires little space for preparation. In fact, it requires even less if you buy pre-cut broccoli instead of a whole head. That’s a tip for easy RV preparation.

Broccoli salad is also pretty versatile. While I like to use a combination of dried cranberries and blueberries, raisins or any dried fruit can be used. I like the crunch of the sunflower kernels, and I sometimes add walnuts or almonds even more healthy crunch. Honey-roasted sunflower kernels add an extra crunch sweetness.

Refreshing Broccoli Salad Recipe

The ingredients:

8 cups Fresh Broccoli

4-5 slices Bacon, cooked and crumbled

1/3 cup Sunflower kernels

1/2 cup Dried cranberries and blueberries

1 bottle (12 oz) Poppy Seed Dressing

The Instructions:

Preparation

  • Fry bacon and allow to cool break or cut into small pieces

  • Rinse broccoli and cut florets from stem; cut into bite-size pieces

Stir it up

  • Mix all the ingredients in a large bowl

Chill

  • Refrigerate the salad for a few hours before serving to let flavors merge

  • Serve cold

Serving Suggestion

  • Any dried fruit would work; try raisins if you prefer

  • I used honey roasted sunflower kernels for extra crunch and sweetness

  • Also good with almonds or walnuts, if everyone likes them

  • Cheese lovers: add 1/2 cup of cubed cheddar cheese
