Cheesy Chicken Broccoli Bake Recipe
We attended a potluck tonight with our friends Cheryl and Terry as they gather with Grand Design owners to prepare for their rally at Elkhart County 4H Fairgrounds.
Easy to make
We purchased the ingredients for this recipe before we know we would be attending a potluck. It makes a great dinner dish, and as it turns out, a great potluck offering as well.

Cheesy Chicken Broccoli Bake Recipe
The ingredients:
1 pound Boneless, skinless chicken (we like thighs)
16 ounces Broccoli, chopped
8 or 15 ounce Ricotta Cheese
2 cups Cheese (any you like), shredded
8 ounce Cream Cheese
To taste Garlic Powder, Salt, Pepper
Pre-Cook
Heat oil or butter in a skillet
Season chicken to taste with salt, pepper, lemon pepper, garlic, or whatever you like
Allow chicken to cool, then cut into bite-size pieces
Chop Chop
Cut up the broccoli, if it isn’t already in bite-size pieces
Cut up the cream cheese so it will stir into the mixture evenly
Mix it Up
In baking dish or separate mixing bowl, stir all the ingredients together
I use the same pan that I cooked the chicken in, to reduce dish-washing
Heat oven to 350 degrees
Make it Hot
Bake 30-40 minutes, or until warmed completely and cheeses are melty

All of these measurements are arbitrary. If you only like a teensy bit of broccoli, use less broccoli. If you don’t like chicken, don’t put any. Although you probably wouldn’t be looking at this recipe if that was true. If you love cream cheese and not ricotta (or you forgot to buy ricotta again), just use cream cheese. Play with the recipe; make it yours!
