Bryan’s French Onion Crockpot Meatloaf Recipe

Bryan made this meatloaf on the way to camp in a crockpot securely placed in the 5th wheel and with the inverter on. He really did! I missed out, so I don’t have real photos for now. Someday I’ll make this and post good photos.

This is a “mostly” simple recipe for meatloaf that you can stick in your crockpot and have ready 8 hours later when you’re too tired/too lazy/too deep into that second IPA to fix dinner. (I found it online and modified it a little because... well, I did.) I used it on a travel day so we’d have a hot meal when we got to the campsite.

(Psst – Crockpots don’t use a lot of power!)

French Onion Meatloaf Recipe

Ingredients

4 medium onions

4 Tbsp butter

2 lbs of ground meat (I use a 50:50 ground beef / ground pork blend because I’m a boujee-wannabe who likes a lot of flavor)

1 ¼ cups breadcrumbs

2 eggs

2 tsp salt

1 tsp pepper

1 tsp garlic powder

1 tsp onion powder

1 cup of shredded Swiss cheese (buy the block and shred by hand; the flavor is better)

Instructions

Slice (don't chop) the onions and brown in a skillet with the butter until the onions start to caramelize/brown. Put ½ of the onion in the bottom of the crockpot.

Mix the ground meat (it should be the 50/50 blend unless you are a purist heathen), the breadcrumbs, the eggs and the spices together. Form into a loaf and place it in the crockpot, on top of the onions. Put the remaining onions on top of the loaf and sprinkle on the Swiss cheese.

Turn the crockpot on to the “low” setting and go do you. Come back 8 hours later and tell everyone how hard you slaved over the meatloaf. Serve with a salad and a straight face. This will easily give 6 healthy servings, 8 if you’re gracious, and 27 if you're my mother.
