Mediterranean campfire Dutch oven casserole recipe
A mediterranean casserole breakfast recipe to prepare in a cast iron Dutch oven or cast iron frying pan over a campfire. You can prepare this over a traditional camp fire or a propane camp fire in a Dutch oven or a cast iron frying pan. It's another easy recipe to make.
Ingredients
2lbs bulk sausage or hamburger
6 large eggs
1/2Cup Feta cheese
1 package frozen spinach
10 slices sourdough bread - (you can also substitute stuffing mix for the bread)
2 cups milk
Preparation
We make this in a cast iron pan so we soak the bread overnight in a bowl. You can also make this is a casserole dish and soak the bread in that but do not soak the bread overnight in a cast iron pan unless you love the flavor of rust.
Cube the bread, layer in a bowl
Mix the eggs and milk - set aside
Brown the sausage or burger (with rosemary - that rocks!) and drain excess grease
spread the sausage over the cubed breadPour the egg and milk mixture over the sausage and bread
Sprinkle the cheese over the top
Bake the whole thing at 350° for an hour or, as we now do, cook it over the campfire in a cast iron pan hung from a tripod.
