Heading West
April 22 is Earth Day, and also our wedding anniversary. We’ve had some very romantic anniversaries. We’ve had some quiet anniversaries. Today we were driven to enjoy our day, by driving 250 miles in the direction of home.
Yesterday we stayed at the State Park and enjoyed a bit more time with our Mini Lite Texas friends. Then we drove 100 miles and stayed at a small RV park on the way to Carlsbad, new Mexico.
We stopped at a local burrito joint and got breakfast burritos for the road. They were really affordable, and quite yummy. However, they don’t fold up either end of the tortilla so they got a little messy to eat!
We will stay a couple nights at Carlsbad RV Park. As we passed into New Mexico we crossed the time-space continuum - er, uh, I mean the time zone boundary. It’s a rare occasion that we get to camp before 2:00 pm! Luckily, check-in is 1:00 pm so we didn’t have to wait. After setting up we relaxed, worked, and looked for a place to eat dinner to celebrate our anniversary in style.
Dinner in Carlsbad
I found a restaurant that had great ratings, good food photos, and seemed to be open, unlike many places on a Monday in Carlsbad. We drove there at dinner time, only to discover that it actually was NOT open today. Back to the drawing board! Peggy checked the map app and found another choice. On the way there, we saw the Yellow Brix Restaurant and decided to stop there.
It was a pretty good choice. We ordered beers and decided to split a Cobb salad and a chicken cordon bleu dinner. The dinner came with two sides; we chose mashed potatoes and tortilla soup. It was really tasty, with my only complaint being that the chicken was over-cooked and it was pretty difficult to cut through the breaded crust.
After dinner we returned to camp, worked some more, and had some ice cream for dessert. We got sleepy at what seemed a very early hour. Understandable though, considering it’s an hour earlier than it was at this time yesterday!
Cavern Tour
Tomorrow we plan to take a tour of Carlsbad Caverns. I toured the caverns with friends Cathy and Irene Lash many years ago - 21 years actually!
