Health coach Jacqueline Hudson’s healthy broccoli salad recipe
In addition to being a fun musical performer who travels full-time in her RV with her husband, Dave, Jacqueline Hudson is also a health coach and has helped many people live a healthier lifestyle. When we asked her for a tasty treat for the Thanksgiving table, she shared this popular dish with us - her healthy broccoli salad.

Ingredients
3 cups of broccoli florets
1/4 cup 2% Fage plain greek yogurt
2T light mayo
2 packaets Stevia or other sweetener
1T apple cider vinegar
1/4t salt
1 ounce of sliced almonds
1/3 cup of reduced fat shredded cheddar cheese
2T low-sodiaum real bacon bits (Jaqueline prefers turkey bacon bits)
Instructions
Place washed broccoli florets in a medium sized bowl, set aside.
In a small bowl, combine yogurt, mayo, sweetener, vinegar and salt.
Stir until smooth
Pour yogurt mixture over broccoli and stir until all combined.
Add sliced almonds, cheese, and bacon.
Toss gently until all pieces are evenly coated.
